    摘要:

    通过实验,在纯辐射加热的条件下比较了恒压,循环压力和先恒压后循环压力3种方式对胡萝卜冷冻干燥的影响。实验表明,在干燥初期就施加压力较大的循环压力不但不能缩短干燥时间,而且会造成制品最终质量的恶化;在干燥初期采用恒压,当制品表面温度达到一定程度时采用循环压力能有效缩短干燥时间、其干燥后的制品质量与恒压干燥的相差无几。

    Abstract:

    The influences on freezing-drying of carrot under the modes of applying constant pressure,cyclic pressure and first constant then cyclic pressure are carried out through experiment with radiant heating.It shows the method that high cyclic pressure is applied in the initial period of drying not only can't reduce drying time but also cause the quality worsening of the sample.The technology that cyclic pressure is carried out when the sample is dried to a certain extent under constant pressure can shorten the drying time and the quality of the dried sample is very close to that when a constant pressure is applied.
