    为了探究果蔬表面水滴对其真空冷却冻伤的影响,选取不同质量的水滴为实验对象,首先研究了在特定终压下水滴的降温特性.进而研究了真空泵排量和真空冷却的终压对水滴降温特性的影响.结果表明:水滴的降温规律和已报道的食品降温规律差别很大,即使水滴没有沸腾现象,其温度也会迅速降低;改变水滴质量和真空泵排量无法阻止水滴结冰;终压低于3 500 Pa时水滴终温将低于0 ℃,低于2 000 Pa时水滴结冰.因此,向果蔬表面喷水时应喷洒均匀,避免出现较大的水滴,当喷水量大时,应适当提高终压,避免因水滴冻结造成果蔬冻伤.

    Abstract:

    In order to explore the influence of water droplets on the frostbite of fresh product,experiments were performed on water droplets with different masses.The cooling characteristics of water droplets were studied under a specific final pressure.Then the effects of vacuum pump displacement and final pressure on water droplets cooling characteristics were studied.The results show that the cooling law of droplets cannot match well with the reported cooling law of food.The temperature of droplets decreases rapidly without boiling.Changing the water mass and vacuum pump displacement cannot prevent water droplets from freezing;the temperature will be lower than 0 ℃ if the final pressure goes down to 3 500 Pa,and droplets will freeze if the final pressure is lower than 2 000 Pa.So water should be sprayed to the surface of fresh product evenly.The final pressure should be raised appropriately with the increase of spraying water for avoiding frostbite.
